Por qué NO debes pasar la pasta por el colador después de hervirla?

Parece imposible equivocarse en una tarea tan básica como cocer pasta, pero resulta que lo estábamos haciendo todo mal.

A la mayoría nos enseñaron a hacerlo así, pero nunca es tarde para aprender algo nuevo. Parece ser que al escurrir la pasta cocida lo único que conseguimos es que se vuelva más pegajosa y menos sabrosa, efecto que se acentúa si además la enfriamos con agua del grifo.

Así pues, ¿cómo debemos hacerlo?
