Estos vasitos navideños de frutos rojos, mascarpone y spéculoos; te harán triunfar!

Unir un sabor fresco de frutos rojos con un sabor tan navideño como es el de los spéculoos es más sencillo de lo que parece a primera vista, como puedes comprobar en esta receta de vasitos navideños de frutos rojos, mascarpone y spéculoos que les traigo hoy, y que puede convertirse en el broche de oro de nuestras comidas festivas.

Sin duda las especias como la canela o el jengibre nos traen recuerdos de recetas de navidad, pero muchas veces intentamos escapar de las preparaciones más densas que estas fiestas nos ofrecen, demasiado cargadas de frutos secos, manteca o aceite. Es por eso que con este postre, fácil para todo el mundo, es sencillo triunfar en la parte dulce de los menús navideños.

Ingredientes para cuatro personas

  • Para la compota de frutos rojos: 100 g de frutos rojos frescos o congelados (fresas, frambuesas, arándanos, grosellas…) + 50 g para la decoración, 45 g de azúcar glas, 5 ml de zumo de limón, 1 g de hoja de gelatina
  • Para la crema de mascarpone: 100 g de queso mascarpone, 100 ml de nata con 35%MG, 30 g de azúcar glas, 1 yema de huevo M, 1,5 g de hoja de gelatina
  • Para la capa de spéculoos: 10 galletas spéculoos del tipo Lotus caramelizadas

Cómo hacer vasitos de frutos rojos, mascarpone y spéculoos

Comenzaremos preparando la compota de frutos rojos. Para eso ponemos la hoja de gelatina a hidratar en abundante agua fría durante 10 minutos. En un cazo ponemos la fruta, el azucar glas y el zumo de limón, y llevamos todo a ebullición. Separamos del fuego, añadimos la gelatina escurrida y removemos para que se integre. Repartimos en el fondo de cuatro vasitos y dejamos enfriar en la nevera como mínimo una hora.

Para hacer la capa de galletas, simplemente trituramos los spéculoos en un robot de cocina con cuchillas o los trituramos dentro de una bolsa de congelados con un rodillo. Repartimos una capa encima de la de frutos rojos.

Para hacer la crema de mascarpone, hidratamos en agua fría la gelatina durante 10 minutos.Echamos el queso en un bol y añadimos la yema de huevo, batimos con unas varillas. Por otra parte montamos la nata bien fría en otro bol añadiendo el azúcar glas poco a poco, incorporando la nata montada cuidadosamente a la mezcla de huevo y mascarpone.

Agregamos la hoja de gelatina escurrida y derretida unos segundos al microondas. Echamos la crema con un cacito repartiéndola encima de la capa de galleta. Reservando en la nevera un mínimo de cuatro horas antes de degustarlos.

Simplemente bien fresquitos y adornados con un poco de spéculoo molido y alguna fruta roja fresca ya están espectaculares estos vasitos navideños de frutos rojos, mascarpone y spéculoos. Puedes tenerlos preparados la víspera y así el día de navidad dedicarte a otras elaboraciones en la cocina, con la seguridad de que con este postre sencillo vas a triunfar.
