Cómo hacer buttermilk o suero de leche en CASA?

A medida que se ha puesto de moda la repostería anglosajona, hay ingredientes con los que no estábamos familiarizados, pero que poco a poco, cada vez son más habituales y utilizados, sobre todo en repostería. El buttermilk o suero de leche es uno de ellos.

Se trata del suero que se obtiene cuando se bate la nata… por un lado se obtiene la mantequilla, y por otro el suero. Su aspecto es muy parecido al de la leche desnatada, es decir, menos espeso que el de la leche entera, aunque quizás presente un color tirando a amarillento… y su sabor es ligeramente amargo.

En repostería se usa frecuentemente para dar esponjosidad en recetas de bollería y mejorar su sabor. Así, es habitual que lo veas como un ingrediente más de recetas de bizcochos, muffins, cupcakes, magdalenas, tartas, etc. Además de la repostería anglosajona, americana e inglesa

En países del norte de Europa como Alemania o Países Bajos también se consume buttermilk de forma habitual, como bebida. También en India es un producto muy consumido… aunque en este caso se emplea en diversas elaboraciones saladas.

Por el hecho de que hayamos adoptado su nombre original inglés… no se debe confundir el buttermilk con el suero de la leche. En realidad es suero de mantequilla y lo único que se retira es la grasa, pero no los fermentos lácticos. En el caso del suero de la leche, sí se retiran los fermentos lácticos.

La cuestión es, cuando te encuentres ante una receta en la que uno de los ingredientes es el buttermilk… ¡no te eches a temblar!, ni descartes la receta, ni salgas a recorrer la ciudad en busca de un ingrediente que aún no es sencillo encontrar… porque elaborar buttermilk casero, ¡es la mar de fácil!

Existen diferentes formas de elaborarlo:

La primera es la forma original… es decir, batir nata hasta  que se separe. La ventaja de esta modalidad es que, además del suero obtendrás una deliciosa mantequilla casera que también puedes utilizar. El inconveniente de esta fórmula es que no es la más económica.

La forma más habitual de elaborar buttermilk casero hoy en día es añadir una un ácido a la leche desnatada. Es tan sencillo como añadir una cucharada de zumo de limón por cada 250 ml. de leche. Tan solo tienes que dejar reposar… y pasados 10 minutos… ¡ya tienes listo tu buttermilk!.
