Bizcocho de limón y leche condensada; ligero y esponjoso con suave sabor a limón

Este bizcocho de limón y leche condensada, aunque no lo parezca, es un pastel ligero y esponjoso, con un suave sabor a limón, y que viene perfecto para meriendas, desayunos o incluso como postre de comidas o cenas copiosas.


  • 6 huevos medianos (de 60gr cada uno)
  • 500gr de leche condensada
  • 200gr de queso de untar, tipo philadelphia
  • zumo de dos limones medianos (80gr)
  • 10gr de maizena

Untamos el molde con una pizca de aceite y forramos tanto la base como las paredes con papel de hornear.
Encendemos el horno a 170º calor arriba-abajo.  Separamos las yemas de las claras.

Añadimos el zumo de limón a las yemas, removiendo con unas varillas manuales.

A continuación agregamos la leche condensada, mezclamos.

Montamos las claras a punto de nieve con unas varillas eléctricas hasta que estén bien firmes, reservamos.
Utilizando las mismas varillas eléctricas, batimos el queso con la mezcla de yemas y leche condensada hasta obtener una crema homogénea.

Agregamos las claras montadas poco a poco con unas varillas manuales y movimientos envolventes con mucho mimo.

Añadimos la maizena tamizada removiendo despacio. Saboreáis una pizca de la mezcla y si os gusta con un sabor a limón más intenso podéis añadir la ralladura.

Vertemos la mezcla en el molde.

Introducimos en el horno a 170º, en la segunda ranura comenzando por abajo durante unos 45-50 min. Dependiendo de cada horno. Los últimos 10 min cubierta con papel de aluminio para evitar que se dore de más. Comprobamos con un palillo.

Cuando esté lista apagamos el horno y dejamos la puerta media abierta durante unos 15 min para que el calor se disipe gradualmente.

Bajará un poco. Dejamos enfriar y desmoldamos.
